| Visiting Gourmet Chef Luncheon |

| (Nutritional Services) - Last fall Gourmet Chef Bill Kaye was invited to be a guest chef at Boundary Community Hospital. The luncheon was organized by the Food Services Manager and was held for the residents, their family members and hospital trustees. Bill started working on the project two months prior to the luncheon, creating a menu with the theme of "Autumn Northwest Farm-Style". "My menu was inspired by the fall family meals of my youth and I wanted to share that warm, home-cooked pleasure for all in attendance" stated Chef Bill. The menu included Tomato & Squash Soup with Northwest Salmon Dumpling, Loin of Pork glazed with apples, apricots and molasses, Rice Barley Pilaf, Roasted Root Vegetables in a brown butter sauce, and Cinnamon Caramel Monkey Bread with Huckleberries, vanilla whipped cream and chocolate dust. The main dining room was transformed into an elegant restaurant and the luncheon was served buffet style. About every six to nine months, meals similar to this are prepared for residents. This event was sponsored in connection with URM Foodservice. "This is such a special treat for our facility" said Susan Cortez, Nutritional Services Manager. "Everyone looks forward to it". Chef Bill said, "This truly was an experience beyond the ordinary for my career as a chef and I am looking forward to working with the hospital in the future". We are looking forward to having Chef Bill back soon.
